About the wine
The grapes are grown in the Carpesica area on limestone soils rich in moraine deposits from the ancient Piave glacier. The vineyards face south-southwest and are located at an average altitude of 180 meters above sea level. San Fermo is the name of the country church that borders the vineyard where these vines are grown.
Tasting note
Bright straw yellow. Delicious millesimato with fine perlage. The bouquet is delicate, with notes of baking spices, fresh pear, citrus and herbs. Extremely straight on the palate with a fine minerality. A long finish, lots of fruit and a touch of walnut shells.
Culinary recommendation
Goes well with antipasti and first courses with vegetables and fish.
Vinification
After descreting and gentle pressing, the must is fermented at 18-20°C. The wine is aged between 1 to 3 months. The second fermentation is carried out using the Charmat method in 100 hl steel pressure fermentation vessels over a period of about 2 months.
