Attention natural wine lovers! Quite untypical for the Loire, Nina and Jonathan Pabiot have created a wine with the Utopia, in which the credo was to intervene as little as possible. After a manual harvest, the grapes were fermented intracellularly, i.e. without pressing or squeezing, in the grape skin and then matured with full yeast and lees in the concrete egg for 18 months. Certainly not a classic Pouilly Fumé, but it's definitely worth a try.
