Tasting note
Light amber color with copper reflections. On the nose, aromas of dried flowers, overripe apricots, emperor pears, walnuts, candied oranges and slight smoky notes. In the mouth, it is rich, dense and full.
Culinary recommendation
Goes well with Vitello tonnato and other types of white meat (cold), tuna carpaccio, pasta such as gnocchi or tonnarelli with cacio and pepe.
Vinification
Name of the vineyard: Stabili della Rocca (3 ha), cultivated using the Guyot method, harvested in mid-September. East-west orientation at 85 m above sea level with a planting density of 4,000 vines/ha and a yield of 70 quintals per ha. After cold maceration, the must is fermented at a controlled temperature for 10 days. The wine then rests in stainless steel containers for 8 months and is then refined in the bottle for 1 month. Acidity 5.13 g/l, dry extract: 23.2 g/l.
