About the wine
In its “Revolution” wine line, Johannes Zillinger is not about the peculiarities of grape varieties and vintages, but about a consistent wine style characterized by the so-called Solera process. And in return, he pulls out all winemaking stops that are compatible with the idea of natural wine. An extremely complex and fascinating wine from Johannes Zillinger.
Vegan
Tasting note
In the bouquet, light yellow fruits, lemons and limes, but also fully ripe yellow apples as well as smoky and stony notes. On the palate, the wine is complex, dense, powerful. On the one hand very fresh, on the other hand ripe with a fine melt. Indescribably complex — and surprisingly at the same time very clear and accessible.
Culinary recommendation
Goes well with all hot starters with saltwater fish as well as veal goulash with white sauce.
Vinification
The grapes come from 25-40 year old loess and sand-lime vines. The individual cuvée partners in turn consist of different vintages and expansion processes. Rösler 2020: Whole grape pressing for elegance, acidity and freshness, fermentation in steel tanks, aged in 500 lt barrels. Syrah 2020, 2019 & 2018: Fermented on berries and aged in 500 lt barrels for minerality and body. St. Laurent 2019, 2018 & 2017 (small portions of NUMEN Rosé) aged in 500 lt barrels using the Solera process for the actual character.
