About the wine
This Pinot Noir draws its strength and energy from the calcareous, gravel soils in Burgundy. The winemaker from the French winery Château de Chamirey transforms it into a real treat with a lot of emotion. The Flaschenpöstler guarantee a culinary experience when you serve this Pinot Noir with red meat or salmon.
Tasting note
In the glass, ruby red color with purple reflections. The nose is complex with notes of licorice, black fruit and pepper notes. On the palate, the Clos des Ruelles has a nice structure with polished tannins and is of good length.
Culinary recommendation
Goes well with poultry, lamb, grilled meats, cheese and aged cheese.
Vinification
The grapes are harvested by hand. Before the start of alcoholic fermentation, a cold pre-fermentation of 4 to 6 days is carried out in order to extract the phelonic components. The grapes are destemmed beforehand. This is followed by a full maceration period of 15 days and the alcoholic fermentation with natural yeasts. 100% of the aging takes place in traditional Burgundian 228 liter barrels for 14 months.
