Tasting note
Balance is the key to this wine. Viognier is an aromatic and rich grape variety, it benefits from barrel aging and contact with yeast grounds, giving it a fuller mouthfeel and more texture. Rich, sumptuous and decadent. Honeysuckle, peaches and dried apricots with a long-lasting salty and citrusy aftertaste. Clean, fresh acidity supports the extravagance on the nose and palate.
Culinary recommendation
Goes well with seafood and shellfish or light meat dishes.
Vinification
Viognier, a traditional Rhone grape variety, is perfect for Lismore's extremely cool climate conditions. The grapes are grown on decomposed slate and this vineyard is one of the healthiest and most balanced on the farm. The entire team is looking forward to the Viognier harvest and the beautiful, amber-colored berries. The grapes were harvested and pressed as a whole at a rate of 550 liters per ton. The juice was settled for 48 hours and transferred to Burgundian barrels (225 and 500 liters, 25% new) for fermentation. The Viognier then matured in these barrels for 15 months.
