About the wine

Dominik Benz hat mit seiner Familie im Süden Frankreichs seinen Traum vom eigenen Weingut verwirklichen können. Nach eine Laufbahn im IT-Bereich liess er sich mit dreissig zum Winzer ausbilden auf dem Weingut Schloss Salenegg in Maienfeld GR. Im 2012 erfolgreicher Abschluss der Ausbildung und Beginn der neuen Anstellung bei Agroscope Wädenswil, im Forschungsbereich Wein. Dominik ist in Zürich aufgewachsen und hat zuletzt in Wädenswil gewohnt. Rechtzeitig zur ersten Ernte ist er Ende September 2013 nach Frankreich gezogen. Hier konnte er im Ariège Rebland von der Domaine du Ribonnet pachten (Moulin de Beauregard). Ein neuer Keller musste gebaut werden sowie eine Wohnung. Heute gehören ihm die Reben von Christian Gerber (Ribonnet) sowie die von Cavinos Erstwinzer Ernst Wirz mit dem wir 40 Jahre zusammenarbeiteten bevor er 2020 altershalber verstarb. Für Cavino ist es eine Freude mit Dominik Benz einen weiterten, innovativen Winzer im Ariège anbieten zu können. Alle Weine überzeugen durch ihre sehr hohe Qualität und Schnörkellosikeit. Benz vinifiziert Syrah, Merlot, Cabernet-Sauvignon, Nebbiolo, Chardonnay und Tannat der drei Lagen Moulin de Beauregard und Moulin à Vent in Fossat im Lèze-Tal. Die Domaine ist biozertifiziert.

Tasting note
The artist Etiquette was designed by the artist Mélissa Tresse, one of the two daughters of our “local star” artist Tristan Rà. Mélissa studied at the “École d'Arts Plastiques” in Toulouse and at the “Ecole Supérieure des Beaux Arts de Nîmes”, among others, and studied with artists for several months in Tenerife, Tunisia and Mali. She will accompany this wine production for 5 years and will certainly provide more great moments! The name “Le Phoenix” was chosen by Mélissa. The phoenix - mystical bird that burns in the fire to awaken from its own ashes. She wanted to express where we/I might be now on my path in life. Even though I am of the opinion that the fire is still burning and the so-called resurrection may yet follow, I understand the message behind it. Let's see what 2022 brings! The wine This wine was blended 1/3 each from Tannat (one of our varieties), Syrah and Cabernet Franc. The grapes were harvested in 2020, the first wine harvest without Martina. After 12 months in different oak barrels (new barrels, 2-3 years old), the three varieties were brought together, lightly filtered and finally bottled in November 2021. As always with us, this wine is made exclusively from grapes, organic wine yeast and (very) little SO2. We do not use any enological magic products, animal products such as egg whites, gelatin or the like, or plasticizers such as gum arabic. Those who enjoy the 4 boxes are welcome to try a bottle now. The wine is on the nose on the dark fruit note, with notes of blackberries, slightly “woody” and with notes of tobacco. Although the tannins are noticeable on the palate, they are already very round. The wine remains present on the palate for a long time. This wine can be stored for a few years and should only be drunk in pleasant company! (Or alone..) cheers Auf euer Wohl Dominik
