About the wine
Domenico Clerico's classics are the two Lagenbaroli Pajana and Ciabot Mentin, both from the top location Ginestra, but matured at different heights. The ciabot mentin from the high altitude has a lot of structure and is often still closed at a young age. With age, he develops finesse and elegance. The Wine Spectator ranked the Ciabot Mentin 2011 among the ten best wines of the year. The plot covers 5.5 hectares. The oldest vines were planted between 1965 and 1970. The yield is 5000 kilograms per hectare. The berries are fermented in a rotor tank for 20 to 30 days, followed by 24 to 30 months of barrique aging, with four fifths of the barrels being new and one fifth being annual. The wine got its name from a plot of land on which Clerico had stored tools. The owner was Mentin. Production: 22,000 bottles (75 cl) and 1000 magnum bottles.
