About the wine

Olivier Rivière is a name you have to remember - or not, because you'll hear a lot more about him in the future anyway! His wines are too good and exceptional, so admirable for what he has already achieved and how freely and independently he goes his way. Through several very well-known stations in France and Spain, Olivier has gradually and purposefully acquired knowledge about biodynamic viticulture and natural wine and has been using it on his own behalf since 2006. The love for Burgundy has never died down and is blazing in each of his wines (and during the aging process, which usually takes place in very small quantities!). Fantastic and, on top of that, very inexpensive wines! Wild and tame, unique elegance, great cinema.

Tasting note
Zinedine Zidane - without headbutting. Quiet strict elegance and strength, flowing and light-footed, bright, gently tart fruit, green banana, grass, lots of calm and deep mineral power, lime. On the palate with an overview, focused and with mineral superior concentration, it all looks so natural and yet is great skill, wonderful balance of sweet, soft fruit and fine, tart masculinity, fresh and with reserves until the final whistle. Great, the calm, cool sovereignty!
Culinary recommendation
Von den Flaschenpöstlern empfohlen: La Bastid Blanco DO harmoniert ideal mit rotem Fleisch, Burger mit Blauschimmelkäse und würzigen Gerichten.
Vinification
Selective reading by hand. Whole grape pressing, fermentation with the vineyard's own yeasts, aging for 10 months in larger French oak barrels.
