About the wine
The winemaker from the Portuguese winery José Maria Da Fonseca has absolutely mastered his craft. Tasting note
Rich garnet red. The bouquet is subdued at the beginning, then the aromas of red berries work out accompanied by a delightful herbal note. The delicate body absorbs the taste of the berries, gains fullness and merges seamlessly into the straight finish.
Culinary recommendation
Goes well with beef, venison, lamb.
Vinification
The grapes are harvested by hand, lightly squeezed with the foot and destemmed by hand using the “Ripanço board”. Fermentation in talhas (capacity approx. 1,600 liters) takes place with part of the must, skins and 30% stems at a temperature of approx. 28oC, controlled by spraying the talhas with water four times a day. The other part is fermented in Lagares. This process is followed by four weeks of skin contact. The wine is then transferred directly into new French oak barrels for 9 months.”
