About the wine

Elim's Shiraz vineyards are trellised and grow on slate with a layer of “koffieklip” (coffee stone). In combination with the cool climate, wines are produced with intense scents and a mineral taste. The vineyards in Franschhoek grow on deep, sandy soils of weathered granite and sandstone and produce elegant wines with a creamy texture. Bot River's grenache vineyards grow in shallower, denser slate soils and produce wines with a high tannin content and dark color. Because the grapes come from different terroirs, the wines have depth and complexity.

Tasting note
The combination of a good year and 40 months of timber construction Has a wine with exceptional Create depth, complexity, and personality. Die intensely pronounced nose shows aromas of rose petals, rose petals, black berries and mulberry fruits, as well as cinnamon and black pepper. An elegant wine with a lively presence and long-lasting aftertaste.
Culinary recommendation
The ideal partner for red meat in most of its forms. With its well-structured tannins, this wine wonderfully complements the intensity of hard cheese.
Vinification
50% of Syrah comes from Elim and 50% from Franschhoek, Grenache from Walker Bay and Petit Syrah from Franschhoek. The grape varieties for blending were harvested and sorted separately, the wines were fermented separately and aged in 300-liter oak barrels. After 40 months of aging, the wines were blended and bottled in October 2016. Only 3,300 bottles were produced.
