Tasting note
Smells intensely of fresh, red berries and spices. Firm in the body, yet extremely elegant with fine acidity and soft tannins. Long aftertaste with mineral notes and full of aromas. It already offers great drinking pleasure, but can mature for a few years. Accompanies meat dishes just as well as fish or pasta.
Vinification
On Mount Etna 3350 m above sea level, the vineyards for the Guardoilvento are located 750 meters above sea level, making them among the highest in Europe. The Nerello Mascalese grapes are fermented in stainless steel tanks. This is followed by an 8-month aging in French barriques and 3 months of aging in the bottle.
