About the wine
The Vifttorio Greco di Tufo is made from the grapes of a steep and sunny vineyard, which was created in 1998 in Montefusco at an altitude of 75 m. Slight overripening, hand picking, maceration on the skins, Fermentation at controlled temperature and aged for at least 36 months, including 18 months in steel and 18 months in bottle.
Tasting note
Shiny golden yellow with a wonderful bouquet of cedarwood, rennet apple and propolis, followed by mineral notes of flint and slate and a slight hydrocarbon note. Warm and enveloping, balanced on the palate with appropriate acidity and minerality.
Culinary recommendation
Accompaniment to sushi and sashimi; risotto with pumpkin and Taleggio cheese; salmon and potato croquettes.
Vinification
A few words about vinification: destemming, cryomaceration and gentle pressing of the grapes, fermentation in stainless steel tanks at a controlled temperature, storage for approx. 3 months in steel tanks, refinement for approx. 3 months in the bottle.
