Vinification
Die ganzen Trauben werden mit einer pneumatischen Presse unter sehr sanftem Druck gepresst. Während der Weinbereitung wird der Most in zwei Fraktionen getrennt: der Most aus der ersten Pressung, der die besten Qualitätsmerkmale aufweist und für die Herstellung von Franciacorta verwendet wird, und der Most aus der zweiten Pressung, der nicht für die Abfüllung verwendet wird. Die alkoholische Gärung erfolgt in Stahltanks bei einer kontrollierten Temperatur zwischen 16 und 18 °C. Der Grundwein ruht bis zum Frühjahr nach der Ernte in Tanks.
