Tasting note
El Beisario is definitely the 'baby' of Carlos Fernandéz. He affectionately calls him FC Barcelona and his eyes light up when he talks about him. It is not only the color of the wine that is very powerful. The aroma of ripe and dried fruit with lots of spice and some wood and the voluminous start on the palate with lots of fruit concentration, a velvety tanni structure and a seemingly endless finish are characterized by body and strength. A leader among Spain's red wines, which rightly receives top marks from the trade press on a regular basis.
Culinary recommendation
Goes well with hearty meat dishes, stews, game and festive occasions.
Vinification
“The grapes for Belisario come from a single vineyard called 'Pago de Cuba Negre. ' It is Labastida's oldest vineyard with vines that are over 100 years old. Minimal returns are sorted out by hand. Fermentation and aging are then carried out in 500-liter French oak barrels. All this is done with virtually no influence from the winemaker. He wants to “let nature make the wine.” The wine ages in wood for 17 months before being further bottled. Only around 2000 bottles of this top-quality elixir are produced annually.”
