About the wine
Ice wine is a matter of luck and a bit of poker. And adventure! In autumn, the decision is made as to whether the weather looks like ice wine or not. After the main harvest in autumn, the vines on which grapes have been left for ice wine are wrapped in perforated film - to protect against bird damage. Ice wine grapes must be harvested frozen at approx. -7°C and pressed immediately. At these temperatures, the water crystallizes, only the sugar binds liquid. The result is highly concentrated, very sweet wines, creamy in texture. The harvest takes place at night or early in the morning, and the vineyards are then illuminated with floodlights. A lot of work, but it's worth it!
