Tasting note
Fragrant notes of Highveld Scrub are abundant, leafy and spiced with cedarwood. Elements of cinnamon, surrounded by sweet notes of tobacco and hay, give it complexity. On the palate, there is a hint of wet, black gravel before the strong, fresh red fruit comes into its own, which is adorned with fennel bulbs, blackberries, plums, red currants and a delicious line of spicy tomato essence. The wine has an opulent structure without being cumbersome. Smooth tannins weave around a core of black plums and soy, supported by a gentle, cleansing acidity, followed by a velvety, soft finish.
Culinary recommendation
The Cabernet Franc is perfect with any duck dish.
Vinification
Located on the cooler eastern slopes of Bottelary, this trellis vineyard was planted in 2004 using the CF1 clone of Cabernet Franc. On soils of decomposed granite and at an altitude of 225 meters above sea level, this low-yielding vineyard produces smaller grapes that offer incredible concentration, structure and maturity with lower sugar levels. The grapes were harvested by hand on March 6, 2021 at a maturity level of 23.5° Oechsle. The grapes were destemmed and gravity filled into tulip-shaped concrete fermenters, where the whole berries were cold soaked for three days before primary fermentation began. In order to achieve optimal extraction, the mash was pumped around up to three times a day, with fermentation temperatures peaking at 28°C. The spontaneous malolactic transformation took place during 11 months of ageing in 1000-liter French oak barrels. The wine was only removed once, two weeks before bottling.
