Spoil your family and friends at Easter dinner with this strong red wine 2018 — Crystallum Peter Max Pinot Noir. The winemaker from the South African winery Crystallum greets us with this wine, which he grows in the countryside. Flaschenpöstler tip: Combine this Pinot Noir with cheese or salmon.

Tasting note
The 2022 vintage is a bit more Burgundian with lots of red fruit such as wild strawberries and rhubarb. There are also mulberries and juicy cherries, which are rounded off by earthy notes such as clove and dark spices. The superfine texture on the palate creates a delicious taste that makes every Pinot lover's heart rise. Coup de Coeur! .
Culinary recommendation
An ideal companion to wild fowl, such as pheasant or wild pigeon in Casissejus with chanterelles and French fries.
Vinification
Peter and Max are the first names of the winegrowers who delivered the grapes for the first vintage of this wine. The vineyards have changed since then, but the name remains to honor the beginnings of our multi-vineyard pinot noir assemblage. The philosophy here is to create a mixture of the various batches that is more than the sum of the individual. Fermented naturally with 50% of the stemmed fruit and the rest as whole grapes. Extraction is reduced to a minimum during active fermentation with a total time of 4 weeks on the skin. Aged for 9 months in used French wooden barrels.
