Tasting note
Tempting aromas of rosemary, blueberry and black cherry. The palate is medium-bodied with good fruit definition, fresh acidity and firm but fine tannins. Well-structured, streamlined and by no means reckless.
Culinary recommendation
Fantastic cinsault with grilled sea bream with eggplant and tomato salad.
Vinification
Cinsault Noir from a vineyard planted in 1988 with unwatered bush vines. Rooted in decomposed granite soils with a high percentage of quartz on the cooler southeast slope of Sinai Hill. Partial whole grape fermentation with dipped caps. Ageing on fine lees for 11 months in older 225 liter and 400 liter barrels. Not a new oak tree.
