About the wine

Selvapiana came into the possession of the Florentine Giuntini family in the 18th century after it had long served as a summer residence for the bishops of Florence. The current owner, Francesco Giuntini, has been responsible for the wine since 1965. Since then, the Fattoria has been one of the small group of the best Chianti producers and has made a meritorious name for itself in the worldwide recognition of the Rufina and Chianti region. They successfully combine the characteristics of Rufina with modern vinification methods at a high level. They owe this quality to good locations, exemplary cultivated vines, rigorous grape selection and careful work in the cellar. The estate, which also produces olive oil and grains, now cultivates their land strictly according to organic guidelines. Rufina is the smallest of the seven Chianti zones. Even during the Renaissance, their wines were highly appreciated by the clergy and nobility thanks to their aging capacity and robustness. They need a few years of storage to fully reveal their qualities. They are always elegant, fine wines with a great depth.

Tasting note
The Riserva-Bucerchiale is a secluded location in the steep southwestern vineyard slope. Rigorously handpicked grapes produce a dense, dark wine with ripe fruit and spicy notes. Harmonious, elegant and with finely polished tannins.
Culinary recommendation
Ideal with grilled and roasted meats, ossobuco and bollito misto. With hearty vegetable dishes and lasagna as well as with ripe cheese.
Vinification
Fermentation for 20-25 days at approx. 30° C in stainless steel tanks. Ageing for 15 months in wood (2/3 large oak barrels, 1/3 used barriques), then stored in bottles for a further 9 months.
