Tasting note
100% Sangiovese, carefully composed from the various crus of Castagnoli. Every year, the fruits produced by each plot are analyzed to create a balanced, complex Chianti Classico that can be enjoyed immediately and is pleasant to drink. A typical classic with a redberry character and hints of citrus and cedar wood. Medium-bodied, elegant, dense and fresh with clean fruit and slightly firm tannins.
Culinary recommendation
Vinification
The grapes are picked by hand in small boxes. The alcoholic fermentation takes place spontaneously with natural yeasts in 1-ton vats and steel tanks. The extraction of paint and tannins is done by hand by pressing down, pumping and delastaging. Malolactic fermentation takes place in oak wood. The maturation takes place 2/3 in 5-hectoliter tonneaux and 1/3 in Austrian and Slovenian 20-hectoliter oak barrels.
