Light golden yellow with greenish reflections - the nose itself is very complex with fruity notes of juicy peaches, apricots and pears. On the palate, there are other subtle notes of aging in oak barrels, such as vanilla, caramel and toffee, but also lactic, creamy notes of cream or oatmeal, which is quite typical of Chenin Blanc. A third of the grapes were pressed whole, i.e. without destemming. The second third was pressed after a week of maceration at 10°C, while the last third was completely fermented on the skins. Only after all three batches had completed the alcoholic fermentation were they brought together and aged in neutral wood for eight months.
