Tasting note
Pear, grapefruit, dried thyme and blanched almonds cut into the nose. Also a touch of anise. Medium to full body with light acidity. Slightly spicy character, long finish.
Culinary recommendation
Excellent wine with pickled zander with pickled radishes and a watercress salad with shisocress.
Vinification
Springdoring comes from an old vineyard on the south side of the Paardeberg. This is the epitome of Swartland Chenin from old vines - scented, with a balanced fruit purity that results in a structured, long and spicy finish, accompanied by a fresh saltiness. The grapes were pressed as whole bundles and the free-running juice was fermented naturally in old French wooden barrels. The springdoring was then aged on the yeast for 10 months and then bottled unfiltered.
