Vinification
The Prestige Cuvée Du Quet comes from 60 — 80-year-old vines, which produce a very low yield of 15 — 25 hl/ha. They grow in the northernmost zones of the appellation. The grapes are not destemmed before fermentation. Alcoholic fermentation and maceration take place in cement tanks for 30 days. The blending of the red wines takes place in the following March, after which the wine ages for about 12 months in cement tanks, foudres and small oak barrels before being bottled. Only approx. 425 boxes are produced per year.
