Tasting note
In the glass, it has an intense purple color. On the nose, there are notes of candied fruit and wood. A great fruitiness on the palate. The tannins are silky soft and the aftertaste is memorable thanks to its spiciness.
Culinary recommendation
Goes well with venison, beef, mushrooms, barbecues, fine pieces of meat.
Vinification
Sorted hand harvesting, selective destemming. Traditional vinification of 25-30 days with several cycles to accelerate the extraction of dyes and tannins from the berry skins. The wine is then aged for 12 months in large Demi-Muid (600 liter oak barrels).
