About the wine
The 20-hectare winery was founded back in 1845. Over the years and decades, the family-run estate has amassed a real treasure, most of the old vines are in excellent 1er Cru and Grand Cru locations. The Robins care for this treasure and know how to make it shine. In vinification, the use of new wood is largely or completely avoided. The wines are sparkling, fresh and pure and are among the best in the appellation.
Tasting note
The late Beethoven - what energy does this wine have at first, this citrus freshness, this striving for something higher, almost relentlessly this chalky minerality, but how high does it go up to heavenly, harmonious expanse, the almost golden fruit still carried by wood. Even cultivated discipline and harmony on the palate that radiate so much grandeur, tart, edgy, almost sharp chalky minerality at the beginning, what a character, and here too, in the glass, as it calms down, spreads, lifts, gently now, even nut, as he finds happiness in striving, softly ends with fresh euphoria and a full heart. Big!
Culinary recommendation
Flaschenpöstler-Tipp: Chablis Valmur Grand Cru AOC passt bestens zu Geflügel, Fisch mit Kräutern und Weichkäse.
Vinification
Selective reading by hand. Gentle pressing, natural sedimentation, fermentation with the vineyard's own yeasts, aging in small French oak barrels (10% new) for just under a year. Unfiltered, unembellished.
