About the wine
Since 2003, Filippo Filippi has created his own world on this ancient estate. The highest locations of Soave DOC are surrounded by forests and meadows, a wonderful environment that is preserved by Filippo and managed according to biodynamic principles (certified organic since 2007). However, free spirit does not exclude respect for nature and innovation; what counts is the terroir, not commerce; almost all wines do not use wood in the aging process. The wines stand out from other soaves in a very unpretentious way. Where they tend to be overripe and lush, Fillipos wines show particular grandeur - harmonious richness and mineral structure. Great wines with origins at a moderate price.

Tasting note
God is a concept — or a wine. Even the simple soave has this blissful, wise character, and it shines even more softly, fuller, more spiritual, the self-contained, just as warm as light, ripe golden-yellow fruit, dried apple, yeasty, interspersed with fresh vegetable notes and this gentle minerality. On the palate, balance, although soft, calm, so rich and light, ripe, yeasty apples supported by the gentle minerality and spice that lingers harmoniously on the fruit — a phenomenon. Outstanding in Soave! That's great!

Von den Flaschenpöstlern empfohlen: Castelcerino Colli Scaligeri Soave Classico DOC harmoniert hervorragend mit leichten Antipasti, Geflügel und Pasta.
Vinification
Castelcerino comes from steel tanks and thanks to its unmistakable character of low yield, intelligent tillage, fermentation on wild yeast, spending a lot of time on whole yeast and, as a result, refraining from the usual interventions in natural winemaking processes. “Castelcerino” is minimally sulphurized natural wine that smells and tastes completely different than you normally expect.
