About the wine

Al-Cantàra was born in 2005. Right from the start, the winery has made a name for itself nationally and internationally thanks to the extremely high quality of its wines. This was the first winery on Etna in terms of the number of important awards. Another distinguishing feature of Al-Cantàra products is their sophisticated and modern packaging, whose distinctive labels by young Sicilian artists, most recently by Annachiara Di Pietro, are decorated with atmospheric images that highlight the traditions, culture and territory of Mount Etna. The vineyard is located in the northern part of the volcano at an altitude of 620 meters above sea level. The soil is volcanic, rich in minerals and has a lot of structure.

Tasting note
Intense ruby red color. The nose is fruity and spicy with vegetal peppery notes. The palate is fresh, with soft tannins and quite persistent.
Culinary recommendation
It goes well with red meat, but can also be tried with blue fish and tuna, as well as with “cous cous” made from meat and vegetables.
Vinification
The grapes are harvested and destemmed by hand in baskets. The crushed grapes are collected in stainless steel tanks, where fermentation takes place with the pomace at a temperature of 26—28 °C. The wine is then transferred to 225-liter oak barrels, where malolactic fermentation takes place. In the barrels, the wine ages on the fine yeast for six months. After a further six months of ageing in steel tanks, the wine is bottled.
