Tasting note
Concentrated and bright ruby red. On the nose, notes of wild plums and dried cherries, plus an earthy undertone and notes of fresh juniper, dried flowers and white musk. The potential of this wine is revealed on the palate. Elegant, silky and tasty tannins. Clean, deep and spicy with a very long aftertaste. Unmistakable and incomparable in style and authenticity.
Culinary recommendation
Equal and equal likes to join. Roast veal crowns go well with royal wine.
Vinification
After the selected grapes have been pressed and destemmed on sorting tables, fermentation begins between 26°C and 28°C. The entire fermentation process takes place in cone-shaped wooden vats for 25-30 days, using only natural yeasts. After the malolactic fermentation is complete, the wine is stored for 36 months in 30 hl oval French oak barrels. It takes at least 12 months to mature in the bottle.
