About the wine

Hans Nittnaus is a thought leader, a visionary, and a gifted winemaker. Anita and Hans run the 30-hectare winery biodynamically, the wines are full of life, extremely precise and completely unvarnished, also thanks to the very careful use of wood and the very moderate extraction. His son Martin goes even further in the direction of minimal intervention with his Manila wines. This is where fining, filtering, and even added sulfur are questioned. At Nittnaus, they are never completely satisfied, always looking for the perfect interpretation of the terroir and so often they find what they are looking for! Zig-fach and highly decorated with international awards and is also a winemaker and winery of hearts!

Tasting note
Dark Side of the Moon. What an attraction, shining pure in the dark, clear, dark, red berry fruit and a magical almost warm attraction, gentle spice, light cocoa, those almost longing, soft tones and a touch of tart notes, green peppers, slate, cool yet warming fascination. On the palate, cool dark freshness, clear dark fruit, tart, fresh spice and cool dark minerality, again that fresh, cool glow in the dark vastness. Full moon, so coolly and yet extremely attractive. Fascinating Blaufränkisch!
Culinary recommendation
Zu Lamm, Pilzrisotto und Kalbsfilet empfehlen Ihnen die Flaschenpöstler diesen Blaufränkisch Manila.
Vinification
Selective reading by hand. Fermentation of the whole berries with the vineyard's own yeasts in steel tanks, low extraction and movement of the mash, storage on the yeast for 10 months, no filtration, minimal sulphurization.
