About the wine
The philosophy of Giovanni Corino is based on the following basic principles: great attention to work in the vineyard in order to preserve the characteristics of the terroir while respecting nature. For this reason, products based on copper and sulfur are mainly used, without the use of pesticides. The sulfite content in the bottles is at least 50% less than what Italian law allows. During vinification, Corino tries to find the right balance between modernity and tradition.

Tasting note
Ruby red color with garnet reflections. On the nose, aromas of ripe red fruits meet floral notes of violets and notes of vanilla and dark oriental spices. Hints of balsamic herbs and delicious Nunaces boiseé On the palate, it is elegant and structured, supported by a soft tannin structure. The balsamic and spicy aftertaste is long.
Culinary recommendation
Perfect with ripe cheeses and rich, earthy dishes made from red meat or game.
Vinification
During winemaking, the must was mashed in rotary fermentation tanks at a temperature of 25-30°C in contact with the skins for 5-7 days. 35% of the aging took place in small new French oak barrels and 65% over a period of 24 months. The Barolo Giachini 2018 from Giovanni Corino aged for 6 months in steel and a further 12 months in bottle before it was released on the market.
