About the wine
2011 was the year Barbaresco Asili Riserva was born. Since then, it has been the spearhead of the work of the Grasso family - a so-called signature wine. Ca' del Baio is an old family business run by the Grasso family. Today it is run by Giulio and Luciana and their three daughters Valentina, Paola and Federico. The total of 28 hectares of vineyards are located in the municipalities of Treiso and Barbaresco.
Tasting note
Brilliant garnet red with slightly ochre reflections. Intense on the nose, with notes of lavender, pine, rose petals, herbs, spices and tar. Velvety fullness on the palate, with an impressive but polished tannin structure and a very long finish.
Culinary recommendation
Perfect with red braised meats, roasts, game and mature cheeses. It also goes well with truffle dishes and dark chocolate.
Vinification
Only in the good vintages are the best grapes from Cru Lage Asili selected by hand. Temperature-controlled maceration in wooden barrels with 10% undestemmed grapes. Twice a day, the must is subjected to battonage. The wine remains on the skins for another 60 days before it is removed and allowed to mature for 30 months in tonneaux of second and third use. After another year in the bottle, the wine goes on sale.
