About the wine
Ca' del Baio is an old family business owned by the Grasso family. It is now run by Giulio and Luciana and their three daughters Valentina, Paola and Federico. The total of 28 hectares of vineyards are located in the municipalities of Treiso and Barbaresco.

Tasting note
Brilliant garnet red with orange reflections, intense bouquet, with fruity notes of sour cherries and floral notes of violets. On the palate, spicy notes of black pepper, licorice and tar, dry, warm, soft taste, strong and long-lasting aftertaste.
Culinary recommendation
Goes well with braised and fried red meats, game and well-aged cheeses. After a few years of storage, it becomes a meditation wine.
Vinification
The grapes are destemmed and fermented on the skins in temperature-controlled steel tanks for approx. 60 days. The wine ages for 24 months in wood, partly in large oak barrels and partly in French tonneaux. It is aged in the bottle for at least 6 months before being sold.
