About the wine
In 1977, Tommaso Bussola began making wine in his uncle Giuseppe's company. In his first active years, Tommaso resumed traditional winemaking. In 1983, he decided to take a different direction, namely: to constantly improve the quality of the product. Today, the family business, now managed by Daniela Bussola and her two sons, cultivates 12 hectares of vineyards, all of which are located in the Valpolicella hills.
Tasting note
Berry concentrate on the nose, lively, reminiscent of freshly pressed white grapes, heavy and dense, nuances of mocha and chocolate, excellent, not crude sweetness. A drop to enjoy just like that.
Culinary recommendation
Recommended by Flaschenpöstlern: Goes well with game, hearty meat dishes and recent types of cheese.
Vinification
Die Trauben werden gegen Mitte Oktober geerntet, zerkleinert und die Gärung wird sofort mit ausgewählten Hefen eingeleitet. Bei Raumtemperatur fermentiert, wird er nach 15 Tagen mit einem Restzucker von 15 g / l abgefüllt. Im Februar findet auf der Hefe des Amarone eine Woche lang eine Refomeration statt. Nach 18 Monaten in Holz wird er in Flaschen abgefüllt. Nach weiteren drei Monaten in den Flaschen, kommt er in den Verkauf.
