About the wine
When Franco Scamperle had to take over the management of the estate from one day to the next as a freshly baked oenologist following a serious work accident involving his father at the end of the eighties, Le Salette was a completely unknown winery that produced a few bottles of Amarone La Marega in addition to Valpolicella and Recioto. Since then, he has put his modern and innovative ideas into practice and has constantly improved the quality of his wines.
Falstaff: 90/100
Tasting note
Complex, dense bouquet, in the bouquet notes of chocolate, dark fruits, tobacco, cedarwood, violets. Powerful on the palate, with lots of extract sweetness, dark fruit and a strong but ripe tannin structure. Probably the best wine to end a convivial evening.
Culinary recommendation
The following period is the ideal enjoyment phase of this wine: 2012-2018 Recommended by Flaschenpöstlern: Goes well with pasta, pizza and beef.
Vinification
The carefully hand-picked grapes are laid out in bottle boxes and dried until February. This increases the sugar concentration to over 15% potential alcohol. Fermentation traditionally takes place on mash, and wine aging takes place in large and small oak barrels.
