About the wine
Made from selected grapes from the Fiano vineyard that surrounds the winery in Salza Irpina. Slight overripening, hand-picking, maceration on the skins, fermentation at controlled temperature and aged for at least 36 months, including 18 months in steel and 18 months in bottle.
Tasting note
Releases floral (mimosa, chamomile, broom) and fruity (peach, apricot) scents in the nose, along with pleasant notes of acacia honey, beeswax and smoky aromas. In the glass, it is golden yellow, of visible consistency, structured and imbued with freshness in the mouth, with a high persistence.
Culinary recommendation
Goes well with burrata di Andria with scampi tartare and bottarga as well as pasta with monkfish sauce soufflé.
