About the wine
With the mild Palomino 2019 — Agostado Palo Cortado, nuances and accents are redefined. The calcareous soils in Andalusia form the breeding ground for this Palomino. The winemaker from the Spanish winery Cota 45 knows how to use them and delights us with this white wine. The Flaschenpöstler guarantee a culinary experience when you serve this Palomino with light dishes or an aperitif.
Tasting note
The Agostado Palo Cortado combines aromas that originate from ripening under floor yeast with notes of oxidative expansion after the pile regresses. On the nose, aromas of apple, chamomile, smoked almonds and mussel shells, paired with hazelnuts, toast and dried apple. Round and creamy on the palate at first. As a contrast, a spicy side slowly builds up, which gives the wine great excitement. The long aftertaste is reminiscent of salted lemon and dried apple.
Culinary recommendation
Goes well with tapas, fish, Japanese cuisine, light dishes.
Vinification
The Agostado Palo Cortado is produced using the same method used to produce oxidative wines in Jerez in the 19th century. The grapes are dried in the sun and then fermented with ambient ovens in 500-liter barrels, so-called botas. This is followed by a three-year aging period in the same barrels. During this time, the wine develops a layer of yeast, which is called pile and initially protects the wine from oxidation. However, the pile regresses and the wine then matures oxidatively.
