The grapes for Sigillo are only harvested at the end of November. The overripe grapes are then extremely concentrated and produce a correspondingly dense, full-bodied wine. The winemaker's art is to add freshness and elegance to this power pack. The Cantina del Notaio does this in an exemplary manner.
