Tasting note
Intense, shiny ruby red. Delicate fruitiness on the nose. Crystal clear aromas. Sweet cherries, wild berries, elegant woody aromas and warm spiciness. Fresh and well-concentrated at the start. On the palate, a fine minerality, again beautiful berry aromas, supple, with fine-grained tannins and a long finish.
Culinary recommendation
Nice accompaniment to fried or braised meat dishes, but also Mediterranean dishes with fried fish and soft cheese.
Vinification
After harvesting by hand, the Pinot Noir grapes are gently pressed and mashed. Fermentation takes place in large wooden vats. The expansion takes place over 15 months, 12 of which are in 228 litre piècen.
