About the wine
Marko Fon is deeply rooted in the tradition and history of Karst. Together with a geologist friend, he made a map of the various rock formations around his village. The company has been family-owned for generations, formerly also in polyculture, and Marko then decided to focus only on wine. The label proudly shows the well of Brije di Komnu, a hamlet that has groundwater and was therefore once considered wealthy.
Tasting note
Jet stream - lies very soft and quiet, wonderful clear expanses of clear apples, but also freezing cold, green-yellow and chalky tart, yet calm, as if flying in the sun, also warming yeasts. Quiet location floating on the palate, this gentle glide through the cutting barren air, very soft, calm, clear the bright apple fruit, inhospitable, bitter, chalky minerality that is as incredibly beautiful as it is concise. Fly at your own altitude: clear, harsh beauty. Fantastic!
Vinification
Very selective reading by hand. Fermentation of destemmed berries with the vineyard's own yeasts for 6 months in amphorae that bury in the karst. Withdrawal and continued storage for 24 months on yeast in 30 hl Slavonian oak vats. Uncoated, unfiltered. Minimal sulfurization (10mg).
