Tasting note
Light yellow in color, the wine shows attractive aromas of peach, lemon peel, mango and dry herbs. On the palate, the salty minerality comes through and mixes with a complex and pleasantly fresh acidity. Perfect as an aperitif alone or excellent to accompany pasta dishes with shellfish or grilled white meat.
Culinary recommendation
Goes well with apéro pasta/pizza poultry seafood.
Vinification
After a delicate desiccation, the grapes are not pressed but macerated on their skin at a temperature of 4°C for around 12 hours to extract the fine aromas. The grapes are then gently pressed and the clarified must is placed in stainless steel fermentation tanks. The fermentation is carried out with selected yeasts at a controlled temperature of 15°C and takes approximately 10 days.
