Unlike normal Valpolicella Superiore, Valfresca is only produced from fresh, undried grapes. The aim is to create a more elegant, Burgundian version of Valpolicella. Winemaker Marco Sartori succeeded in doing this with accuracy. The vines on the Valfresca plot of just 2 hectares benefit from very calcareous soil, as in Burgundy, and from the large temperature differences between day and night. The result is a fresh, red-fruited, spicy, elegant wine that inspires Burgundy fans like us.
