Vinification
Die Vinifikation fand wie folgt statt: Autochthone Rebsorte Timorasso, wird Hand gelesen, über Nacht kalt mazeriert und danach sanft gepresst. Schonende Vergärung während vier Wochen in verschiedenen Behältern aus Edelstahl, grossem Holzfass und Keramik. In diesen Gefässen reift der Weisswein für 10 Monate auf der Feinhefe, sie wird regelmässig aufgerührt (Battonage).
