About the wine
The Càntele family founded the company in 1979. With continuous quality research, the family has won an important position among the wineries and wineries in Salento and has been able to assert itself permanently on foreign markets. The company's philosophy is to produce the best grapes in order to meet their own ambitious goals.
Tasting note
Dark purple interspersed with cherry-red reflections. The fruit and red flowers announce the development of a broad spectrum of spices: cardamom and bergamot, vanilla beans and candied violets. The aroma confirms the challenging and decisive character typical of Negroamaro, with long-lasting and engaging balsamic notes.
Culinary recommendation
Flavorful and structured kitchens that are persistent in gustatory and olfactory perceptions. As well as game dishes and very mature cheese.
Vinification
After pressing, the must remains in contact with the husks for a maceration period of 15 days. The fermentation temperature is 26°C. After the malolactic fermentation is complete, the wine ages in French oak barriques for approximately 12 months.
