Tasting note
Spicy and fragrant start with aromas of cassis, black cherries and ripe stone fruit. Hints of roasted coffee and oak wood. On the palate, full-bodied structure with a long aftertaste. Beautiful finesse, complex and multi-layered.
Culinary recommendation
Goes well with beef — from steaks to stroganoff to tartare or slow-cooked roast from the oven. Wonderful accompaniment to all kinds of stews — whether it's lamb gigot, beef shoulder, roast pork or ossobuco. Excellent with mature hard cheese — from Parmigiano Reggiano to Sbrinz to pecorino or older alpine cheese.
Vinification
Batches from different locations and harvest times. Some of the grapes are processed using the Appassimento process. Partial aging in French barriques for 12 months.
