About the wine
The San Valentino winery is located on a hill near Rimini. It has been managed biodynamically by Roberto Mascarin since 1997 and the star oenologist from Italy, Luca D'Attoma, has been advising him since 2016. Today, his wines are among the most respected and award-winning in Emilia Romagna.
Bio
Tasting note
Bright red color, aromas of red berries and wild berries on the nose. On the palate, a fine balance//www.belvini.de/lexicon/balance.html between power and elegance. A delicious Sangiovese.

Vinification
Selective, gentle handpicking in small baskets. Gentle destemming and crushing of ripe berries. Temperature-controlled mash fermentation with wild yeasts takes place over eight days. Malolactic fermentation in stainless steel tanks. Ageing is also carried out in steel tanks for eight to ten months, using regular battonage.
