About the wine
St. Michael-Eppan is a cooperative consisting of 350 winegrowers and is one of the largest and most successful wineries in South Tyrol. Despite its size, quality has been at the forefront since it was founded in 1907, which is why it is now also one of the best wine cooperatives in the world. The winery has been managed by the outstanding oenologist Hans Terzer since 1977. The Sauvignon 2015 The Wine Collection is the first wine from this new collection. The Wine Collection (TWC) series comprises pure varietal wines from a highly limited production.

Tasting note
The fruity aromas of Sauvignon The Wine Collection DOC Alto Adige of passion fruit, nectarine and basil express a lot of character with a very unique structure. The playful nuances of lime and green apple then show their own character. Light body and distinctive acidity make the white wine, which shows lots of character and class in the mouth.
Culinary recommendation
It goes well with seafood, ravioli with venison filling and rissoto with herb pesto.
Vinification
3 days of cold maceration, then gentle pressing, fermentation and aging for 12 months in barriques/tonneaux, further storage for 18 months in stainless steel tanks on fine yeast
