The winemaker from the French winery Domaine Fournier Père et Fils is absolutely proficient in his craft. Elegance and finesse are the characteristics of this white wine, which originates in the picturesque and sunny Loire countryside. With this distinctive Sauvignon Blanc 2020 — Sancerre Blanc Clos du Roc, the term taste takes on a new meaning. Flaschenpöstler culinary tip: This Sauvignon Blanc is ideal to serve with mussels or fish.
Tasting note
The Clos du Roc impresses with its citrus notes on the nose and its tense, dense, long and mineral finish on the palate.
Culinary recommendation
Flaschenpost team tip: Sancerre Blanc Clos du Roc goes perfectly with goat cheese, mussels and fish. Our recommendation: Drink this white wine at a slightly chilled 12°-14°C.
Vinification
The Clos du Roc dates back to the famous and ancient Abbey of Saint-Satur from 1450. Located on a steep, south-facing flint hill, it is one of the most beautiful plots of land in the Sancerre appellation. The vines receive maximum sunlight and grow protected from the cold winds, protected by the “Bois de Charne” forest, which is located directly above the vineyard. The “Clos du Roc” is harvested with care when perfectly ripe. The juices are extracted at low pressure before cold storage on fine yeast for 6 to 8 days before the start of fermentation. The juice is fermented at a low temperature and then stored on fine yeast with weekly batonnage for 10-12 months to reveal all the richness and complexity of this beautiful vineyard.
