Tasting note
Notes of stone fruit, such as peach, and notes of orange peel and orange blossom on the nose. Voluminous and complex on the palate with a distinct salty character from the salty soils. A white wine with a great texture, medium body and well-integrated acidity.
Vinification
Gentle maceration with gentle skin contact for 5 days and spontaneous fermentation in concrete containers with local yeasts from the nature park. After half of fermentation, the wine is pressed and the skins are removed. The wine is aged for five months on lees in concrete containers under a pile lid.
