Vinification
After manual harvesting, the selected grapes are destemmed and fermented with natural yeasts at a temperature-controlled temperature for approx. 18 days. The pomace hat is regularly wetted from above so that it does not dry out. It is then gently pressed and the wine matures in French barriques for around 12 months. During this time, the biological acid degradation takes place.
